Yellow Thai Curry is a glorious combination of flavors and textures. Veggies, coconut milk, and curry paste help to create the ultimate comfort food dish.

Ingredients

  • 1 tablespoon oil
  • 4 tbsp yellow curry paste
  • 2 - 15 oz cans full-fat coconut milk
  • 1/2-1 cup water
  • 4 carrots, sliced
  • 4 white potatoes, peeled and cubed
  • 1 yellow onion, thinly sliced
  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 3/4 tsp salt
  • 1 1/2 tsp soy sauce
  • cilantro, for garnish (if desired)
  • jasmine rice, for serving

Instructions

  1. Heat the oil in a large pot over low heat. Add onions and sauté for a few minutes until soft and fragrant.
  2. Add chicken and yellow curry paste to the oil and cook over medium heat for 3-5 minutes or until chicken is cooked through. Stir in the potatoes and carrots.
  3. Add in coconut milk and 1/2 cup water, stir until combined. Additional water may be added if the curry is too thick. Simmer 20-30 minutes or until carrots and potatoes are tender.
  4. Stir in soy sauce and salt. Serve over jasmine rice.
