Greek Tzatziki

  • 1 English cucumber, grated
  • 2 cups plain greek yogurt
  • 1 1/2 tablespoons lemon juice (1/2 lemon)
  • 3 cloves garlic, minced
  • 1/4 cup fresh dill
  • 2 tablespoons olive oil
  • 1/4-1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

1. Place the grated cucumber in a fine mesh strainer over a bowl. Press down to remove excess liquid from the cucumber.

2. Add the cucumber and the remaining ingredients to a bowl and stir to blend.

3. Refrigerate the tzatziki sauce for at least 1 hour before serving to allow the flavors to infuse into the yogurt.

4. Serve with your favorite Mediterranean foods!
