Stroopwafel Ice Cream Sandwiches

These stroopwafel ice cream sandwiches are made with smooth and creamy vanilla ice cream sandwiched between two ooey-gooey caramel-filled stroopwafels, dipped in melted chocolate, and then topped with your favorite toppings.

Ingredients

  • 16 stroopwafel cookies
  • 1 1/2 quarts vanilla ice cream, softened
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 Tbsp coconut oil

Instructions

  1. Scoop softened ice cream onto a half size baking sheet. Spread it over the baking sheet until it's in a smooth layer. Freeze until hardened, about one hour.
  2. Using a circular cookie cutter, slightly smaller than your stroopwafel cookies, cut out the ice cream. 
  3. Place a circle of ice cream on one stroopwafel. Place another stroopwafel on top to create a sandwich. Set sandwiches on a baking sheet lined with parchment paper. Freeze for 30 minutes.
  4. Add chocolate chips and coconut oil to a microwave safe dish. Microwave for 1 minute, stirring every 30 seconds until smooth.
  5. Dip the frozen sandwiches into the melted chocolate.
  6. Top with your favorite toppings. Freeze until chocolate is hardened before serving or enjoy as is.

Notes

My favorite toppings include chopped peanuts, pistachios, coconut flakes, and sprinkles. But don't be afraid to get creative and come up with your own topping ideas.
