Ingredients
1
cup
heavy whipping cream
8
oz
cream cheese
softened
½
cup
powdered sugar
3-4
peaches
peeled and diced
1
can peach nectar
1
package lady fingers
24 cookies
sliced almonds
mint
optional
Instructions
Soak the diced peaches in the peach nectar for 30 minutes. Once done soaking, strain the peaches and save the leftover peach nectar.
Beat cream cheese and powdered sugar until smooth. In a separate bowl, beat whipped cream until stiff peaks form.
Gently fold the whipped cream and cream cheese together until combined.
Dip cookies into peach nectar and arrange the cookies side by side at the bottom of the dish.
Spread half of the whipped cream mixture on top of the cookies.
Spread the diced peaches on top.
Follow with another layer of cookies along with the rest of the whipped cream. Top with sliced almonds.
Refrigerate until ready to serve, at least 6 hours or overnight. Serve with mint garnish, if desired.
Notes
I used a 7x11" baking pan to make this tiramisu. If you'd prefer to use a 9x13" pan, I recommend doubling the recipe.
