Instructions
Place grated cucumber in a fine mesh strainer or cheesecloth. Press or squeeze out as much moisture as you can.
In a bowl, mix together the yogurt, cucumber, lemon juice, garlic, dill, olive oil, salt, and pepper until well combined.
Cover and refrigerate for at least 1 hour.
Serve chilled with pita bread, grilled meats, or fresh veggies.
