For our 11th anniversary, Jacob and I decided to travel to Cancun! We've always had a bit of a travel bug, so it was fun to be able to travel again (not as easy after having kids!) One of the highlights was when we were greeted with a luxurious coconut lemongrass tea at the Viceroy where we stayed. One sip of the drink, and I instantly fell in love with the creamy goodness of coconut milk and the bright flavor of lemongrass. I was already obsessed with the fragrance and flavor of lemongrass because of our travels, so I guess it made sense why I liked this tea so much. This drink was such a delicious and refreshing way to start our adventure in paradise!
After drinking the coconut tea, I couldn't stop thinking about how much I liked it. I knew I needed to recreate it as soon as I got home. This recipe is the perfect way to bring tropical vibes right into your kitchen! I just know you’ll enjoy it as much as I did!
🥘 Ingredients
- Water - The base of the tea.
- Coconut Milk - Makes the tea dreamy and creamy.
- Lemongrass - Adds a bright, citrusy and herbal flavor.
- Granulated Sugar - Adds sweetness.
- Mint Leaves and Lime Wedges - Optional garnish to add color.

- Bring the water to a rolling boil in a large saucepan.
- Remove the pan from heat, add the lemongrass and steep for 30 minutes. This allows the flavors to infuse with the water.
- Remove the lemongrass from the pan and discard. Stir in the sugar and coconut milk until both are fully dissolved.
- Serve warm for a cozy treat, or pour over ice for a cool and refreshing drink!

Refrigerator: Store any leftover tea in an airtight container in the fridge for up to 3 days.

- If you can find fresh lemongrass, use it! It will have more vibrant flavor. Just make sure to bruise (lightly crush) the stalks with the back of a knife before adding them to the water for the best flavor infusion.
- You can easily adjust the sweetness in this recipe by adding more or less sugar to suit your taste. Start with ⅔ cups, taste, and add more if you like it sweeter!
- If you prefer a lighter version, you can swap out the coconut milk for lite coconut milk for fewer calories. It just won't be as creamy!
