Not sure what to do with your leftover rice from last night's dinner? Curry fried rice to the rescue! This easy and flavorful fried rice recipe uses leftover rice, comes together in less than 30 minutes, and the curry powder gives it a fun twist from the traditional fried rice we all love. I can guarantee your family will love this fun, flavorful dish!
🥘 Ingredients
- Day old rice: If you use sticky, warm, just-cooked rice, it will give your fried rice a soggy, mushy texture. Allowing cooked rice to sit in the refrigerator overnight will give it time to dry out, and your fried rice will have a much firmer texture.
- Olive oil
- Garlic
- Yellow onion
- Frozen peas and carrots: Fresh vegetables can also be used; cooking times will need to be adjusted accordingly.
- Eggs
- Yellow curry powder
- Soy sauce
- Green onions
- Salt and pepper
- Parsley
🔪 Instructions
- Saute onions, garlic, carrots, and peas until tender.
2. Mix in curry powder, salt, and pepper.
3. Push the veggies to one side of the pan, and add the beaten eggs. Stirring until cooked through.
4. Add the rice and soy sauce, stir until everything is combined.
5. Add in the green onions.
6. Serve topped with fresh parsley.
🌟 Top tip
Make sure you use day-old cooked rice. Day-old rice prevents the fried rice from becoming mushy and soggy.
🍴 Storage
Store fried rice in the refrigerator in an airtight container for up to 5-7 days.
