    Ingredients for curry fried rice.
    • Day old rice: If you use sticky, warm, just-cooked rice, it will give your fried rice a soggy, mushy texture. Allowing cooked rice to sit in the refrigerator overnight will give it time to dry out, and your fried rice will have a much firmer texture.
    • Olive oil
    • Garlic
    • Yellow onion
    • Frozen peas and carrots: Fresh vegetables can also be used; cooking times will need to be adjusted accordingly.
    • Eggs
    • Yellow curry powder
    • Soy sauce
    • Green onions
    • Salt and pepper
    • Parsley

    🔪 Instructions

    1. Saute onions, garlic, carrots, and peas until tender.

    2. Mix in curry powder, salt, and pepper.

    3. Push the veggies to one side of the pan, and add the beaten eggs. Stirring until cooked through.

    4. Add the rice and soy sauce, stir until everything is combined.

    5. Add in the green onions.

    6. Serve topped with fresh parsley.

    Make sure you use day-old cooked rice. Day-old rice prevents the fried rice from becoming mushy and soggy.

    Store fried rice in the refrigerator in an airtight container for up to 5-7 days.

    Ingredients

    • 3 cups day-old cooked rice
    • 2 tablespoons olive oil
    • 3 cloves garlic, minced
    • 1 yellow onion, diced
    • 2 cups frozen peas and carrots, thawed
    • 2 eggs, lightly beaten
    • 1 ½ tablespoons yellow curry powder
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 1 ½ tablespoons soy sauce
    • ¼ cup green onions
    • Parsley, for garnish

    Instructions

    1. Preheat a large frying pan over medium heat. Pour in the olive oil. Add the onion, garlic, and frozen vegetables. Saute the veggies until tender, about 5-7 minutes.

    2. Add the curry powder, salt, and pepper and stir until the vegetables are evenly coated.

    3. Push the vegetables over to one side of the pan. Pour the lightly beaten eggs onto the other side. Using a spatula, gently stir the eggs until they are cooked through.

    4. Once the eggs are cooked, mix them in with the vegetables. 

    5. Add the rice and soy sauce to the pan and stir until combined and heated through.

    6. Stir in the green onions and remove from heat.

    7. Taste the fried rice, and add more salt and pepper if desired.

    8. Garnish with fresh parsley before serving.

    Notes

    1. Make sure you use day-old cooked rice. Day-old rice will give the fried rice a firmer texture than fresh rice, resulting in a soggy, mushy texture.

      We always have leftover rice so we love making fried rice a couple times a week but never tried making it with curry so this was a delicious treat! It's definitely going to become a staple for us.
