Step 1: Saute onions, garlic, carrots, and peas until tender.

Step 2: Mix in curry powder, salt, and pepper.

Step 3: Push the veggies to one side of the pan, and add the beaten eggs. Stirring until cooked through.

Step 4: Add the rice and soy sauce, stir until everything is combined.

Step 5: Add in the green onions.

Curry Fried Rice

Ingredients
- 2 tablespoons olive oil
- 1 yellow onion diced
- 3 cloves garlic minced
- 2 cups frozen peas and carrots thawed
- 1 ½ tablespoons yellow curry powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 eggs lightly beaten
- 3 cups cooked rice day-old
- 1 ½ tablespoons soy sauce
- ¼ cup green onions
- cilantro or parsley for garnish
Instructions
- Preheat a large frying pan over medium heat. Pour in the olive oil. Add the onion, garlic, and frozen vegetables. Saute the veggies until tender, about 5-7 minutes.
- Add the curry powder, salt, and pepper and stir until the vegetables are evenly coated.
- Push the vegetables over to one side of the pan. Pour the lightly beaten eggs onto the other side. Using a spatula, gently stir the eggs until they are cooked through.
- Once the eggs are cooked, mix them in with the vegetables.
- Add the rice and soy sauce to the pan and stir until combined and heated through.
- Stir in the green onions and remove from heat.
- Taste the fried rice, and add more salt and pepper if desired.
- Garnish with fresh parsley before serving.
