    Can anyone else believe that there is less than a week until Christmas?! 5 days! How...did...that...happen? I seriously could use another week of December. I mean, I haven't even gotten around to making my annual Christmas cookies or candy...Bummer. I guess there's always next year.

    But, since there IS only one week left until Christmas, it's the perfect time for me to share Jacob's family's favorite holiday fruit salad recipe (wow, that's a mouthful!) of all-time...seriously though. This salad must be a Southern Utah tradition, as everyone who lives there seems to make it!

    Jacob's family makes this salad every year for Thanksgiving — I'm just obviously a little late getting around to posting the recipe — but it's a great salad for those Christmas parties too. Basically, we're all kind of obsessed with this salad, but for good reason!

    Pomegranate Fruit Salad  (emphasis on the "pomegranate", since it's really the best part!) is jam packed with pomegranates, apples, mandarin oranges, bananas, and whipped cream...you know, all that yummy goodness.

    I'll admit, it's a pretty refreshing change from the overload of Christmas cookies and cakes and candy...I don't know about you, but I tend to get pretty "sugared out" by Mid-December. And it's the perfect side dish to take to any last minute Christmas get-togethers this week! You'll instantly become the hit of the party! Plus, those pomegranate seeds...aren't they so festive?

    The best part? It is sooo easy to make, like seriously (unless you are new to that shelling pomegranates part, then you may want to watch this)! You'll have this salad whipped up in a matter of minutes. YES...please! Although, I do recommend eating this salad right after you prepare it, since the bananas and apples don't tend to sit well for very long (unless you have some of this handy of course).

    Word of advice: make sure you get a pretty hefty serving of this salad (before the party of course...wink, wink), since this stuff always goes fast!

    This Pomegranate Fruit Salad is a tasty, simple combination of fresh fruit and whipped cream. It is the perfect side dish for a holiday dinner!

    Ingredients

    Units Scale
    • 2 apples, chopped
    • 1 (11 oz.) can of mandarin oranges, drained
    • 2 bananas, sliced
    • ½ pomegranate, shelled
    • 7 oz. whipping cream
    • 2-3 tablespoon of white sugar
    • ½ tsp vanilla

    Instructions

      1. Add the apples, mandarin oranges, bananas, and pomegranate seeds to a medium bowl.
      2. In a separate bowl, mix the whipping cream with a hand or stand mixer until soft peaks form.
      3. Add the sugar and vanilla and beat well until the cream is of a stiff consistency.
      4. Combine the fruit with the whipped cream and fold gently until combined.
      5. Serve immediately.

    Notes

    This recipe can easily be doubled, tripled, etc. if you need to feed more people. The amount of whipping cream and sugar can also be adjusted according to your taste. I don't usually measure those two ingredients, but I added an estimate of how much I use to the recipe.
