Who else is excited for the 4th of July next week? I'll admit, this is one of my favorite holidays of ALL-TIME. I mean who doesn't love fireworks, swimming, BBQs, homemade ice cream, and more fireworks all on the same day?!
I have very fond memories of spending the 4th of July at my grandma's house as a kid. Each year we'd always have an amazing BBQ of hot dogs and hamburgers, take a dip in the hot tub and then enjoy homemade root beer and peach ice cream on the patio while watching a display of fireworks in the backyard. Definitely the epitome of summer.
In my opinion, there is no better way to celebrate America's birthday (well, besides fireworks of course!) than with a festive dessert. And because I LOVE fresh berries in the summer, they are the star of today's recipe. Inspired by English trifle, this pretty little dessert is guaranteed to be a hit at your 4th of July festivities. And to all of my non-American friends, this dessert is fantastic for any get-together or just because you are in the need of a sweet treat. Honestly, this parfait is delicious anytime!
These berry cheesecake parfaits are basically a lightened-up version of classic cheesecake. Made with a creamy mixture of Neufchatel cheese and yogurt, layers of graham cracker crumbs, and tons and tons of berries, the parfaits taste just like a slice of cheesecake, but are half the calories! Plus, unlike an English trifle, these parfaits are all single-serving size - which makes them super easy to serve at your 4th of July party next recipe.
Keep in mind that this recipe does only make four servings if you use these glasses, but if you are planning on feeding more people I think these parfaits would work great (and look beautiful!) served in shot glasses

Berry Cheesecake Parfaits
Ingredients
- 8 oz cream cheese softened
- 1 ½ cups plain yogurt
- 1 teaspoon vanilla extract
- 4 tablespoon granulated sugar
- 6 graham crackers crushed
- strawberries sliced
- raspberries
- blueberries
Instructions
- With a mixer, beat the cheese until creamy. Add the yogurt, vanilla and sugar and continue mixing until well-blended. Set aside.
- Crush the graham crackers with a rolling pin. Set aside.
- Layer the parfaits, starting with the graham cracker crumbs, cheesecake filling, and berries. Continue layering until each glass is full. Garnish with additional graham cracker crumbs and berries. Place in the fridge until ready to serve.
