Banana Bread with Dulce de Leche Swirl

This classic banana bread is made with a homemade dulce de leche swirl to create the perfect combination of sweet and fruity flavors. Top off a warm slice of banana bread with a drizzle of the dulce de leche for a sweet treat that is every bit as decadent as it is simply irresistible.

I'm embarrassed to admit it, but one thing I have the hardest time baking is quick bread. I've tried so many times to make it, but it never turns out for me. Case in point. I tried to make a beautiful strawberrry banana quick bread last winter. I baked the bread for well over the time the recipe called for, before the top burned, and as soon as I cut it open it was doughy inside! There's literally nothing more depressing than a baked good that doesn't cook all the way!

Well, in an effort to finally put an end to my quick bread baking woes I decided to do a bit of research and I came across some tips for baking banana bread. Let's just say, I've finally cracked the code! I'm embarrassed that it took so many years for me to finally put this matter to rest.

So, are you ready to know the secret?! Aluminum foil. Yes, it's seriously that simple! You take a piece of aluminum foil, and halfway through baking the bread you "tent" the bread with the foil. Doing this helps to keep the crust from burning, but allows the inside to cook through. There are a couple of other tricks you can do, but this one thing is what made today's recipe possible!

Now on to the recipe! Banana Bread with Dulce de Leche Swirl. It's just your everyday banana bread recipe, but with a sweet caramel swirl that pairs perfectly with the fruity bananas in the bread. And if you really have a sweet tooth (like me!) you can top a slice of the fresh-baked banana bread with a drizzle of homemade dulce de leche. Pure. Heaven.

Dulce de Leche Banana Bread

Ingredients
  

  • ½ cup unsalted butter softened
  • ¾ cup white sugar
  • 2 eggs
  • 3 bananas
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ cup dulce de leche

Instructions
 

  • Preheat oven to 350ºF. Grease and flour a loaf pan.
  • In the bowl of a stand mixer, cream together the butter and sugar. Add eggs, bananas and vanilla. Mix until combined.
  • Sift together flour, baking soda, and salt. Add to the creamed mixture. Mix until the batter is just barely combined.
  • Pour the batter into the prepared pan. Spoon the dulce de leche on top of the batter. Use a knife to swirl it through the batter.
  • Bake for 55-65 minutes, making sure to "tent" the bread with foil halfway through baking.

Notes

If you like fairly sweet banana bread, I recommend making sure your bananas are pretty ripe.
If you use a mixer, you don't need to worry about mashing the bananas before mixing. They mix in really well with a mixer.
Try drizzling dulce de leche on a slice of warm banana bread. Trust me.
