The sweet peach and mango pair so well with the crunchy red bell pepper and just a little spicy kick from the jalapeño.

- Mango: Make sure your mango is ripe! It should show a good balance of red, yellow and green color and it should give in slightly when it's gently squeezed.
- Peach: For the best flavor the peach you use should be ripe, but not overripe or bruised.
- Tomato: Adds a little bit of acidity so the salsa isn't overly sweet. You can use any tomato variety, I opted for Beefsteak when I made the salsa.
- Jalapeno: Adds just a touch of heat. You can leave it out entirely if you're sensitive to heat.

Step 1: In a medium bowl, gently mix together the mango, peach, tomato, onion, jalapeno, and cilantro.
Squeeze in lime juice, add salt and pepper, and stir to combine.

Step 2: Chill for at least 30 minutes to give the flavors time to meld. Serve!

- Dice everything very small. The flavors blend better and the salsa is easier to serve when the produce is diced up pretty small. If you don't have a veggie chopper, I highly recommend getting one as it will make this process so much easier! This veggie chopper (affiliate link) has become an absolute workhorse in my kitchen.
- Use very ripe fruit. Underripe mango or peach will affect the texture of the salsa and make it more tart than sweet.
- Let it rest. Chill the salsa for at least 30 minutes before serving. This allows the flavors to meld together so you end up with a much more flavorful salsa! In fact, I think this salsa is even better the next day.
