I wait all year for peach season! There's nothing quite like that first bite of a fresh, juicy peach. And recently, I discovered a new way to enjoy summer's best fruit: peach lassi. This easy recipe blends roasted peaches with creamy yogurt, a touch of cardamom, and a drizzle of honey for a drink that's both refreshing and comforting.

Step 1: Preheat oven to 400°F (200°C). Place peach halves cut-side up on a small baking sheet. Using a pastry brush, brush the peaches lightly with melted butter. Roast for 20-25 minutes, or until the peaches are soft, juicy, and slightly caramelized. Let cool for 5-10 minutes.

Step 2: In a blender, add roasted peaches (with skins), yogurt, milk, honey, cardamom, and a small pinch of salt. Blend until creamy and smooth.

- 1 ripe mango chopped
- 1 large ripe peach chopped
- 1 medium-sized ripe tomato chopped
- ¼ cup red onion finely chopped
- 1 jalapeño finely diced
- ½ red bell pepper chopped
- 2 cloves garlic minced
- ¼ cup cilantro chopped
- lime juiced
- ¼ teaspoon salt
Instructions
- In a medium bowl, gently mix together the mango, peach, tomato, onion, jalapeno, and cilantro.Squeeze in lime juice, add salt and pepper, and stir to combine.
- Chill for at least 30 minutes to give the flavors time to meld. Serve!

- Prep: For the peaches, peeling is completely optional. If the skin doesn't bother you, you can leave it on. In fact, the skin has more nutrients anyways!
- Storage: The salsa will stay fresh for about 2-3 days in the refrigerator. Keep in mind that the fruit will release juice as it sits, so give it a quick stir before serving.
