Sweet and creamy, this roasted Peach Lassi is a refreshing twist on the classic Indian drink! Made with juicy, ripe summer peaches and rich and creamy yogurt, this iced drink is the perfect way to cool off on a hot day.

I wait all year for peach season! There's nothing quite like that first bite of a fresh, juicy peach. And recently, I discovered a new way to enjoy summer's best fruit: peach lassi. This easy recipe blends roasted peaches with creamy yogurt, a touch of cardamom, and a drizzle of honey for a drink that's both refreshing and comforting.

This peach lassi is the perfect complement to my Indian curries, like my Butter Chicken and Rice or my Chicken Tikka Masala Recipe.

  • Greek yogurt: Regular full-fat yogurt can also be used.
  • Milk: If you don't want your lassi to be as rich and creamy, you can swap the milk for water for a lighter version.
  • Honey: Honey can also be replaced with an equal amount of agave or granulated sugar.

🍑 How to Make Peach Lassi

Step 1: Preheat oven to 400°F (200°C). Place peach halves cut-side up on a small baking sheet. Using a pastry brush, brush the peaches lightly with melted butter. Roast for 20-25 minutes, or until the peaches are soft, juicy, and slightly caramelized. Let cool for 5-10 minutes.

Step 2: In a blender, add roasted peaches (with skins), yogurt, milk, honey, cardamom, and a small pinch of salt. Blend until creamy and smooth.

Step 3: Taste and adjust sweetness. Pour the drink over ice into two chilled glasses. Garnish with a sprinkle of crushed pistachios and a peach slice. Enjoy!

🌟Expert Tips

  • Choose ripe peaches: The sweeter and juicier the fruit, the better your lassi will taste! In the U.S. peak peach season is typically from July to August (or as early as May and late as September, depending on the region you live in), so I'd wait to make this recipe until then!
  • Don't skip roasting: Roasting the peaches deepens the flavor and gives them almost a caramel-like sweetness.
  • Chill before serving: For the most refreshing drink, use cold yogurt and serve the drink over ice.
  • Adjust sweetness to taste: Peach varieties vary in sweetness, so start with less honey and add more if needed.

Can I use canned or frozen peaches?

Yes! If you're dying to make this peach lassi, you can definitely make it in the "off-season" by using canned (in juice, not syrup) or thawed frozen peaches. You can skip the roasting step since canned/frozen peaches probably won't roast as well. But the drink will still taste amazing!

Do I have to roast the peaches?

Not necessarily! You can definitely make this lassi using fresh peaches for a lighter, peachy flavor. Roasting just adds a richer, caramelized taste.

Can I make it ahead of time?

It's best enjoyed fresh, but you can store it in the fridge for up to 24 hours. Stir or shake before serving, as the drink may separate.

Ingredients
 
 

  • 1 ripe mango chopped
  • 1 large ripe peach chopped
  • 1 medium-sized ripe tomato chopped
  • ¼ cup red onion finely chopped
  • 1 jalapeño finely diced
  • ½ red bell pepper chopped
  • 2 cloves garlic minced
  • ¼ cup cilantro chopped
  • lime juiced
  • ¼ teaspoon salt

Instructions
 

  • In a medium bowl, gently mix together the mango, peach, tomato, onion, jalapeno, and cilantro.
    Squeeze in lime juice, add salt and pepper, and stir to combine.
  • Chill for at least 30 minutes to give the flavors time to meld. Serve!

Notes

  1. Prep: For the peaches, peeling is completely optional. If the skin doesn't bother you, you can leave it on. In fact, the skin has more nutrients anyways!
  2. Storage: The salsa will stay fresh for about 2-3 days in the refrigerator. Keep in mind that the fruit will release juice as it sits, so give it a quick stir before serving.
