All summer long, we always have our fridge stocked with strawberries, blueberries, raspberries, blackberries, you name it (my little one-year-old daughter is a big fan!) Whether we are using them for topping my Acai Bowl Recipe, enjoying them on my Best Crepe Recipe, or mixing them into this caprese salad, we look forward to berry season every year. I just love how versatile summer berries are!

If you're looking for another fun way to enjoy this seasonal produce, you'll love today's recipe! Complete with a mixture of your favorite berries, fresh mozzarella, mint, and a strawberry balsamic glaze - this berry caprese salad is basically summer in salad form!

Ingredients in Berry Caprese Salad

  • Berries: I like to use an assortment of strawberries, blackberries, blueberries, and raspberries, but you can substitute for whatever berries you like!
  • Mozzarella pearls: If you can't find mozzarella pearls, you can buy a block of mozzarella and cut it into cubes instead.
  • Mint leaves
  • Balsamic vinegar
  • Honey

How to Make the Salad

  1. Combine the berries, mozzarella, and mint in a bowl.
  2. Drizzle with strawberry balsamic glaze.

How do I store leftovers?

Store any leftover salad in an airtight container in the refrigerator for up to one day. However, keep in mind that the berries tend to become mushy the longer the salad sits. So I'd recommend enjoying it fresh!

Can I use store-bought balsamic glaze?

Yes, if you're short on time, store-bought balsamic glaze can be used in place of the homemade version. However, making your own gives a fresher flavor.

Ingredients
  

Caprese Salad

  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 8 oz mozzarella pearls
  • ⅛ cup mint leaves cut into strips

Strawberry Balsamic Glaze

  • 1 cup balsamic vinegar
  • ½ cup strawberries diced
  • ¼ cup honey
  • ½ teaspoon salt

Instructions
 

  • Combine the berries, mozzarella and mint in a large bowl.
  • Drizzle with the balsamic glaze.
  • Strawberry Balsamic GlazeCombine the glaze ingredients in a small sauce pan. Let simmer for 8-10 minutes until thickened.
  • Strain into a jar or bowl. Allow to cool before adding to salad.
